At the end of March, Nicole Dodson-Sands posted to the Facebook group, Burque Take Out & Curbside Food Service, with a request. “My husband is on hospice and slowly working his way through a bucket list. He has never had beef Wellington but has seen it on ‘Hell’s Kitchen.’ He really, really wants to try it. So where can I pick him up a good authentic beef Wellington?” That’s when a local chef stepped forward. Marc Quiñones, the executive chef at Hotel Andaluz, replied to the thread saying he’d be honored to prepare the dish for Nicole’s husband, Brent. “Just to be in a position to do something this special and this important, it’s very emotional and humbling. It makes life’s stresses seem so insignificant,” Quiñones told KOAT. He prepared the beef Wellington for the Dodson-Sands family and delivered it to them this past week. Nicole tells sister station KOAT the dish and the sentiment hit the spot. “It feels very lonely and to have so many people from the community be like ‘We want to do this for you, we wanna help your family, we wanna do this—’ it does not feel lonely,” Nicole said. Brent agrees, “It’s been really nice.”The local love didn’t stop there either, the owner of a local cake shop also stopped by with a special treat: a six layer-coconut cream cake. The family says the support is proof that sometimes the greatest medicine of all is love. “If the food doesn’t cure me, nothing will,” Brent joked.
